Sunday's are a good day to clean out the refrigerator. And what better way to do that than to make a nice hearty soup! Using up items left over from my box last week (since I just received a new box today!) I am throwing together what I call "Refrigerator Soup".
- 2 oz Bacon, small diced
- 3 onions, medium diced
- 1 lb kale, destemmed and washed (you could also use swiss chard, or mustard greens!)
- 8 oz mushrooms, sliced
- 1 pound potatoes, medium cubed (you could also add carrots!)
- 1 lb sausage
- 2 quarts of chicken stock
- salt & pepper
In a large pot, brown the bacon.
Once the bacon is fully cooked, toss in the onions and stir. Cook until onions are translucent. If it seems like the bacon is burning, and a splash of chicken stock to cool things down and loosen the brown bits from the bottom of the pot.
Add the kale, mushrooms and potatoes with about 1/2 quart of chicken stock and cover to let simmer.
Meanwhile, in a separate pan, cook off your sausage. Today we are using Jacuterie sausage.
Once cooked, deglaze your pan with some chicken stock and add that stock to your soup pot. Slice/dice the sausage into medium pieces and add to your soup.
Add the remaining chicken stock and let simmer for 2-3 hours.
Season to taste with salt and pepper!
